In this compact beginner-friendly workshop, we will get to know & create three fresh dairy products every 15 minutes. Fermentation processes often require more time than typically available in a kitchen – but this course is specifically all about what you can do with little time.
We'll start with a warm-up: making butter from cream, shake-it-style. Moving forward, we'll use a smart combination of whisking and acidic ingredients to compel the milk to transform its protein-rich body into cottage as well as grilled cheese in the blink of an eye. Overall, it's a delicious and exciting experience – without any rush.

Every summer, Marlene moves up into the high mountains to turn dreams into reality and milk into cheese. To spend summertime in nature and to carefully practice the craft of cheesemaking. Throughout the rest of the year, she distributes her latest cheese edition to selected shops and restaurants, gives workshops on cheesemaking, and is currently working on her second book. Her first book, "Käseglück," might, in all modesty, just be the most beautiful book about making cheese at home.
